CHICKEN CURRY MADRAS
(Madras curry) Located on the Bay of Bengal, Madras (now known as Chennai) is well known for its culinary traditions. This Madras-style curry paste is made distinctive by a unique balance of herbs and spices enhanced by the addition of fenugreek and mild chilli. This is a versatile recipe that goes well with chicken, lamb or vegetables such as pumpkin and potatoes. For an authentic Indian experience, serve with biryani rice!
INGREDIENTS:
Soyabean Oil, Shallots, Garlic, Salt, Red Chillies, Lemongrass, Mustard, Fenugreek, Ground Turmeric, Cumin, Coriander Seeds.
DIRECTIONS:
1. Heat oil in non-stick pan on medium-low heat. Add spice paste and stirfry for 1/2 minute. 2. Add onion, chicken, and potatoes; stir fry for 3 minutes. Lower heat; add coconut milk and bring to a boil. 3. Cover and simmer for 3 minutes or until meat is tender. Stir occasionally. Store in a cool dry place.
