There are Similarities in the Cooking of the Scandinavians but there are some interesting difference in the Norwegian Cuisine. They have enormous breakfast consisting of Salted & Pickled Fish, Herring, A variety of breads, Cheese, cereals, bacon, eggs, potatoes, fruit & fruit Juices, Coffee & tea, sweet and sour milk, buttermilk and pastries. Fresh Fish is incorporated into the daily diet much more than in Sweden & Denmark. Pork is served with Sauerkraut that is mot aged but tart and peppered with Caraway Seeds. Mutton & Lamb are 2 of Norway's Main Meat. Sour Cream shows up in every conceivable way-dissolved in soups and sauces, spooned into batters, heaped on breads, stirred into Salads and cooked with fish-giving every dish a fresh tangy flavor. With this cookbook we hope to enable you to capture some off the freshness, simplicity and warmth from the kitchens of Norway!
